Super Bowl Sunday Party Recipes

Looking for something fun to do with your kids? Super Bowl Sunday is coming soon, and it’s a great time to get the kids involved in the kitchen! We’ve yet to find out which teams will battle for the National Football League’s top title on February 7th, but that doesn’t mean we can’t prepare a fun family event with lots of yummy tailgating food. We’ve shared below some of our favorite finger foods that are quick and easy to prepare with your children for the perfect football party. Whether you’re quarantining with your family or hosting a small gathering of friends, these appetizing dishes will be a big score:

Potato Skins

Ingredients:

  • 4 large baking potatoes
  • Extra-virgin olive oil
  • 8 ounces thick-cut bacon, diced
  • 2 cups shredded cheddar cheese
  • 1 bunch scallions
  •  Kosher salt
  •  freshly ground black pepper
  • 1 cup sour cream

Preparation:

Preheat the oven to 400 degrees. Rub the potatoes with olive oil and bake them on a foil-lined baking sheet until their skins are crisp and a fork easily slides into their flesh, about 1 hour. Transfer the potatoes to a cooling rack and let cool for 10 minutes.

While the potatoes are cooking, cook the bacon in a large skillet over medium heat until crisp, then transfer to a small bowl. Trim and thinly slice the scallions. Crumble bacon into bite-sized pieces.

Using an oven mitt or a folded kitchen towel to handle the hot potatoes, cut each into quarters lengthwise to create four wedges. Using a small spoon, scoop the flesh from each wedge, leaving 1/4 inch or more of the flesh. Top with ½ cup cheese and bacon. Place under the broiler until the cheese is bubbling. Place the skins on a serving plate. Season with salt and pepper. Spoon a teaspoon or so of sour cream on each and scatter the scallions over the plate. Serve with hot sauce or salsa.

Air Fryer Mozzarella Sticks

Ingredients:

  • 1 (10 oz) package mozzarella string cheese
  • ¼ cup flour or Cassova flour
  • 1 large egg
  • ¼ cup plain breadcrumbs
  • ¼ cup panko
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp paprika
  • Marinara sauce or Ranch dressing for dipping

Preparation:

Place halved cheese sticks into a ziploc bag and freeze for 30 minutes. Whisk egg in a shallow bowl. Mix breadcrumbs, panko, and seasonings together until well blended in a separate bowl. Preheat your air fryer to 370 degrees for five minutes. Take cheese sticks out of the Ziploc bag and place in a separate large Ziploc bag and add flour to the bag. Shake until the sticks are covered with flour. Dip each flour-covered cheese stick into the egg, then roll in crumbs and seasonings until well coated.

Open the air fryer and spray the basket with cooking spray. Place 5-6 mozzarella sticks into the basket and close the lid. Air fry for 5 minutes. May need to adjust the timer depending upon crispiness and melted cheese. Repeat for the rest of your cheese sticks. Serve with Marinara sauce or Ranch dressing.

Air Fryer Chicken Wings

Ingredients:

  • 1 lb chicken wings split into flats and drummettes
  • 1 Tbsp olive oil
  • 2 tsp garlic salt
  • 1 tsp lemon pepper
  • Ranch or Blue Cheese dressing
  • 1 bunch celery stalks

Preparation:

Thoroughly pat dry chicken wings with paper towels and place in a mixing bowl. Coat in 1 Tbsp oil then sprinkle on 2 tsp garlic salt and 1 tsp lemon pepper. Toss to evenly coat with seasonings. Place on the air fryer basket, spacing evenly and air fry at 400 degrees for 8 minutes per side, or a total of 16 minutes, or until chicken wings are crispy and golden brown on the outside.

Serve with your favorite dressing and clean, cut celery stalks.

Football Brownies*

Ingredients:

  • 1 box brownie mix, plus ingredients called for on box
  • 1/3 cup heavy cream
  • 1 cup semisweet chocolate chips
  • 2/3 cup powdered sugar
  • 3 1/2 tsp milk

Preparation:

Preheat the oven to 350 degrees and line a 9 x 13 pan with parchment paper. Prepare brownie mix according to instructions and bake until a toothpick inserted in the center comes out clean, 20 to 23 minutes. Let cool completely.

Cut football shaped brownies out of baked brownies and place on a cooling rack placed over a baking sheet.

Place semisweet chocolate chips in a heat proof bowl while you microwave cream until hot, about 40 seconds. Pour cream over chocolate and let sit for 3 minutes, then stir until creamy and no lumps remain.

Dip brownies in ganache and place in the refrigerator to set, 30 minutes.

Making icing: In a small bowl, stir powdered sugar and milk until thoroughly combined. Place icing into a piping bag or resealable plastic bag and cut a very small hole in the tip. Decorate each football with laces, then return the tray to the refrigerator to harden, 5 minutes more.
